White Chicken Chili


One of my coworkers made this delicious recipe for a work party.  It is super easy and sooo yummy!  I bought my first crock pot last Saturday and could not be prouder to finally own one (so domesticated) or happier with it!  I started the chili Sunday morning, left it while I went to brunch, pure barre and ran errands, by dinnertime it was ready!  I hope you enjoy!

Ingredients:
-2 boneless skinless chicken breast (you can use more, but this was plenty)
-2 (15oz) cans great northern beans
-1 (15oz) can hominy or white corn
-1 envelope of taco seasoning
-1 (4.5oz) can of chopped green chilies
-1 (10 3/4) can condensed cream of chicken soup
-1 (14oz) can chicken broth
-1/2 cup or small container of sour cream (I used light)

Place chicken in a 4 quart (mine is a 6 quart) slow cooker. Top with beans and corn.  In a medium bowl, combine taco seasoning, chilies, condensed soup and chicken broth.  Pour over top of ingredients in the crock pot.  Cover and cook on low for 8-10 hours, I cooked mine for 9.  Before serving, stir to break up chicken (I used a fork) and then stir in the sour cream.  You can top it with green onions and cheese, but honestly it didn't need it.  Currently living off the delicious leftovers!
