Pumpkin Delight

I made these for work and they turned out delish!  They are supposed to be mini pumpkin donuts, but clearly after baking them in a mini muffin pan, they look like mini pumpkin muffins...oh well!

1/3 c. canola oil
1 lg egg
1 tspoon vanilla extract

Cinnamon sugar topping
2 tblspoon cinnamon
2/3 c. sugar
4 tblspoon butter (melted)-I just melted the whole stick ;)

-Preheat oven to 350 degrees
-Lightly spray mini muffin pan
-Lg. Bowl-combine flour, cinnamon, nutmeg, allspice, cloves, baking powder and salt
-Separate Bowl-whisk pumpkin, milk, brown sugar, canola oil, egg and vanilla
-Combine mixtures into one bowl and stir (put the wet ingredients into the dry)
-Scoop batter into muffin tray
-Bake 10-12 min until toothpick comes out clean
-Combine cinnamon and sugar

Friday...finally!

I discovered Travis Garland while in the Hamptons, we went into this cool surf shop and I demanded the guy working there to tell me who it was since my spotify wasn't picking him up.  He is an independent artist, but can be found on itunes and I am really digging his voice!!  This weekend I'm off to the beach to celebrate my bestie Kippy Ficken's bachelorette party...look out peeps, I have glow sticks galore, some rockin Pistol Polish, champagne by the gallons and a boat ride scheduled for this chickadee!  I guess I'll sleep when I'm old...wink wink!

A Beautiful Weekend!

The weekend was spent in NYC, Thursday, my friend Jess and I flew to NYC.  We spent the night in the city and had the most fabulous dinner at Locanda Verde-fabulous menu, atmosphere and location!  We had brunch at the kitchenette on Friday, where I had the most delicious slap-yo-mama hot chocolate!  We shopped in Soho, where I made a splash at my fave, C. Wonder and then grabbed the subway to Jamaica Train station.  We met up with Jess's boyfriend Payton and caught the Long Island Railroad out to the Hamptons, a 2 hour ride.
We stayed at a fabulous bed and breakfast, the Harborwoods Inn, great rooms and they made us a Swedish breakfast!  Dinner Friday was at the Beacon, right above the yacht club over looking the magical harbor and all the fancy boats-excellent food, we sat outside on a covered porch!  Saturday came fast, the only downfall of our lovely accommodations were the chickens on the neighboring property, good lord they were loud!!!  We walked around town to check out the lay of the land and grabbed lunch at LT Burger.  Beautiful town, gorgeous weather and extremely peaceful!
The royal wedding began at 3pm with bag pipes playing outside and a gospel choir singing oldies love songs inside.  It was a gorgeous wedding, I really loved how the priest prayed for all the single people and that was given the loudest, "Lord, here our prayer"  definitely giggles throughout at how loud the response was!!!  The reception was at LT's parents beautiful home, where we were greeted with champagne or mini margaritas, clearly I chose the champagne!  Cocktails and appetizers were served around the pool and dinner and dancing took place under a magical tent with lanterns hanging from the ceiling.  Some highlights from the wedding, the bride and groom danced to Jay-Z's "99 problems" and the bride rapped "No Diggity" for the group-pretty much the most bad-ass thing I've seen!  A magical wedding, a beautiful couple and lots of friends made for one fabulous weekend!!!

A Little Gem

Here is a little gem for you, Mumford & Sons singing Bruce Springsteen's "I'm on Fire."  I'm headed up to NYC today to spend the night in the city with my bestie Jess, aka my soul sista after our adventures in NOLA.  We head to the Hamptons on Friday for the "Royal Wedding" of our dear friend LT and her hottie groom to be Morgan.  Excited for this adventure as always!  Look out for a post with all the details!!

A Little Road Trip

Last weekend, I embarked on an epic road trip with my friend Erin and two cousins Kellie and Lindsay.  We left early Friday and headed north to Troy, Ohio for the Gentlemen of the Road music festival.  It took us through four states, but the results were totally worth it!  Friday night, Edward Sharpe and the Magnetic Zeros played-such a magical group!!!  We danced and sang at the top of our lungs!  Saturday, our favorites were Old Crowe Medicine Show, the Vaccines and of course Mumford and Sons, the main reason we made the trip.  To say their performance was magic is an understatement.  Their talent was on display with the various instruments and when they played "Come Together" by the Beatles, the night was complete, we had reached musical heaven.  They did a few songs completely acapella, including a cover of Bruce Springsteen's, "I'm on Fire" the complete stadium all 27,000 of us were completely quiet while we witnessed true musical brilliance.  It was a weekend I will never forget and I am so happy my two cousins had the time of their lives.
