Pumpkin Delight

I made these for work and they turned out delish!  They are supposed to be mini pumpkin donuts, but clearly after baking them in a mini muffin pan, they look like mini pumpkin muffins...oh well!

1/8 tspoon ground cloves
2 tspoons baking powder
1/2 tspoon salt
3/4 c. pumpkin puree
1/2 c. milk
1/2 c. brown sugar
1/3 c. canola oil
1 lg egg
1 tspoon vanilla extract

Cinnamon sugar topping
2 tblspoon cinnamon
2/3 c. sugar
4 tblspoon butter (melted)-I just melted the whole stick ;)

-Preheat oven to 350 degrees
-Lightly spray mini muffin pan
-Lg. Bowl-combine flour, cinnamon, nutmeg, allspice, cloves, baking powder and salt
-Separate Bowl-whisk pumpkin, milk, brown sugar, canola oil, egg and vanilla
-Combine mixtures into one bowl and stir (put the wet ingredients into the dry)
-Scoop batter into muffin tray
-Bake 10-12 min until toothpick comes out clean
-Combine cinnamon and sugar
-Cool donuts/mini muffins for a couple minutes and then dip into melted butter and coat with cinnamon sugar mixture.  Let cool on wax paper and voila a fall treat!
