This recipe is an old favorite of mine I began making in college, I have made it healthier now and it is one of my go to delish meals!!!
-Quinoa Pasta (so much better for you and taste like whole wheat pasta)
-Sun-dried tomatoes
-Baby Spinach
-Fat Free Feta Cheese
-1 lemon
-olive oil
Cook the quinoa pasta per the directions, make sure you don't overcook the pasta. In a medium skillet, put 2 tbsp. of olive oil and sauté the spinach over medium heat until it becomes limp. Squeeze the lemon over the spinach and stir. Take as many sun-dried tomatoes you want and place them on a paper towel to remove the oil. Add the sun-dried tomatoes to the spinach and toss around for a minute. Drain the pasta and add the spinach and sun-dried tomatoes to the pasta. Add the feta cheese on top and voila, a quick, easy delish meal!!
