-Goat Cheese
-Pasta (any kind you have on hand)
-Arugula (chopped)
-1 Lemon (juiced)
-Olive Oil
-Salt & Pepper
Cook your pasta following the instructions. Drain and put in a bowl. Squeeze the lemon juice allover the pasta and add just a little olive oil to keep the pasta from drying out. Add in freshly chopped arugula, salt and pepper and goat cheese. Eat in a cozy place....aka my couch for me with E! News on, this was a perfect night's dinner after a long day at work!!!
