Weekend

I have been listening to the new Alabama Shakes album on repeat, it's going to be a summer favorite!   The song, "Don't Wanna Fight" kills me with the power of the instruments and the power of the lead singer, Brittany's voice.  P.S. check out this article in the new Garden & Gun this month!!  
I'm laying low this weekend, grabbing drinks with friends and packing for a work trip to Detroit...wish me luck, since my grandmother has put the fear of God into me about being safe....between her and my parents, I'm preparing myself for anything.  Have a great weekend!

Arnold Palmer Sheet Cake






 Mama Jill and I made this Cake for a cookout Sunday night......brought to you by Southern Living.  I will say, that we both thought the cake was going to be fluffier, but it is more like a pound cake.  Still very delicious, but just a dense cake with light icing!


1.5 cups boiling water
family-size tea bags
1 cup butter, softened
2 cups granulated sugar 
1/2 cup firmly packed light brown sugar
large eggs, at room temperature 
3.5 cups cake flour
2 teaspoons baking powder
3/4 teaspoon table salt
1/4 teaspoon baking soda


1. Preheat oven to 350°. Grease (with shortening) and flour a 13- x 9-inch pan. Pour 1.5 cups boiling water over tea bags in a heatproof glass bowl. Cover with plastic wrap, and steep 10 minutes. Lift tea bags from liquid, and press against side of bowl, using back of a spoon; discard tea bags.
2. Beat butter in a separate large bowl at medium speed with an electric mixer until creamy. Gradually add sugars, beating until light and fluffy. Add eggs, 1 at a time, beating just until blended after each addition. Whisk together cake flour and next 3 ingredients; add to butter mixture alternately with 1 cup tea, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Pour batter into prepared pan.
3. Bake at 350° for 35 to 40 minutes (It took us over 40 minutes) or until wooden pick inserted in center comes out clean. Cool completely on a wire rack (about 20 minutes). Spread Lemonade Frosting on cake.

Lemonade Frosting

(8-oz.) package cream cheese, softened 
1/4 cup butter, softened
6 cups powdered sugar
1 tablespoon lemon zest (we used a whole lemon)
3 tablespoons fresh lemon juice (we used over a whole lemon)

Beat cream cheese and butter at medium speed with an electric mixer until creamy. Gradually add powdered sugar, 1 cup at a time, beating at low speed until blended after each addition. Beat in lemon zest and lemon juice just until blended. Increase speed to high, and beat until light and fluffy.

Weekend

Happy long weekend friends!  I'm working from the beach today and can't wait to soak up some sunshine on these vampire-pale legs of mine!  Have you checked out the Nordstrom and Shopbop sales?  They are pretty awesome and have some great steals!  I watched the Billboard Music Awards last Sunday and saw the world premiere of Taylor Swifts, "Bad Blood" music video.  She totally kills it, love the fierce, girl power vibe that comes from the video!  Happy long weekend!!

Weekend

This capped off my first week on the new job and so far I am LOVING it!  My team is super cool and while I'm not up and running yet, I'm confident that in the next couple of weeks I'll get over the new girl feeling.  This weekend I plan on catching up with friends and chilling.  Resting up for Memorial Day weekend or the kick off to summer as I refer to it!  Have a wonderful weekend and enjoy Dustin Lynch's, "One Hell of a Night."

Weekend

Even though Tropical Storm Anna came for a long visit to the beach last weekend, it was still a wonderful weekend!  Anytime I can escape to Figure 8 is a great day, no matter what the weather is doing.  Friday, my sweet cousin Kellie graduated from nursing school at UNCW.  A huge crowd of our family and her friends had dinner after at the Pilot House in downtown Wilmington.  It was so great to be able to celebrate her and to catch up with my aunts and cousins.  We had other things to celebrate as well, Kellie accepted a job at New Hanover hospital, my cousin Lindsay accepted a job in St. Lois, my cousin Logan accepted an internship and I started my new job yesterday.  It was literally a weekend of celebration and to top it off we celebrated Mother's Day Sunday.  I sent Mama Jill and my grandmother flowers from The Bouqs.....the bouquet was seriously gorg and they are my new go-to spot to send flowers from.  Have a great week!
